Just how do you make the perfect Yorkshire pud for Christmas?

8 eggs, 8 oz of flour and a pint of milk (or relative quantities).  Whisk up and then leave in the fridge overnight.  Get the fat smoking hot and give the batter a quick whisk, then pour into the fat, stick in the oven at 220 for around an hour.  Once they are puffed up, open and close the door quickly to let the steam out.  (This is a James Martin recipe and it really works).

Wow, that makes it sound easy, I'm tempted to try it (always bought ready-made up to now). Thanks Barmaid.

Thanks Barmaid, Will try that as erindraws always uses ready made ones so thought I would do some home made ones.
