This is just a question about courtesy and etiquette.

I know there are few living Victoria Cross holders alive.

If they were a guest at a function or suchlike. Would it be etiquette to stand when they made their way to their place? or should other guests stand as a gesture of respect anyway?

Or should there be any acknowledgement at all?

IMO only if they were a guest speaker or guest of honour. Of course individuals can stand if they wish.

Don't know about etiquette demands - but I would stand as a gesture of honour and appreciation anyway.

In 2019, I was waiting on Whitehall, ready to march in the RBL Remembrance parade. Stood next me was L/Cpl Beharry, VC, being very nice to everyone who wanted to talk to him. Just behind him in the parade, was Bill Speakman from Stockport, who won the VC in Korea. They were chatting a great deal and obviously sharing their experiences but it was a great honour for me to be so close to them.

Apparently the oldest living holder is John Cruickshank, 104, who, as a Flight Lieutenant, won his Victoria Cross for sinking a U-boat in the Arctic in 1944.

even a Field Marshal, Air Marshal or Admiral/Lord Honcho of the Fleet has to salute them, so yes...

It is not statutory for "all ranks to salute a bearer of the Victoria Cross": There is no official requirement that appears in the official warrant of the VC, nor in King's Regulations and Orders, but tradition dictates that this occurs and, consequently, senior officers will salute a private awarded a VC or GC.
