Roast eggplants under broiler until quite, quite well done.Remove, cover with paper bag or foil to let steaming soften the skin. Skins can be a bit awkward to remove, but a teensy bit of the charred stuff gives a lovely smoky flavor.
Alternatively, you can [and I usually do] microwave the heck out of them with olive oil and salt, until they are really, well, for the lack of a better word; slimy. In this instance, if you have soft-skinned asian eggplants[aubergine], you can leave the skins on.
Now: mash with TAHINI [ground sesame paste from a middle-eastern or healthfood store], then add garlic, salt,more olive oil if you like it,and lemon juice to taste. Fresh mint makes it even better.
