Since going metric, how does British money work? Are there 100 pennies in a pound, for example? (Signed: Canadian)

Yes. 100 pence in a pound, that's how the metric system works. There are also 5 pence, 10 pence, 20 pence, 50 pence, 1 pound and 2 pound coins. Notes are 5, 10, 20, and 50 pounds.
And as to how it works in practice...much more easily than before. it's hard to imagine what UK would be like in a world of shilling, guineas etc etc
