It's as easy to make your own falafel as it is to use a mix.
For the traditional recipe, you'll need to find some tahini {sesame paste} at a health-foods or middle eastern grocery. Then mix: Cooked chickpeas (rinse them off if you're using tinned), garlic, lemon, and the tahini, some people add an egg as a binder. You don't need measurements, just mix it until it looks right to you. Brown on each side in a pan.
An egyptian acquaintance used seasoned couscous for his falafel (he made his for commercial purposes) and it was quite good with a few sesame seeds on the outside which toasted into a nice crust.
I like either one.
