water from mushrooms

what is the best way to get the water from the mushroom to stop them going soft and waterey when frying???

Hi jimmonas
If you are pan frying them, add salt as soon as you begin to cook them. Fry on a fairly high heat.
The added salt seems to draw the water content from them. Enjoy!!

And use the widest pan you have. The more room they have in the pan, the quicker the moisture is driven off.
