Find out if you have a local FE College that does courses relevant to hotel work. Also contacy local hotels as they might allow you to attend college on day release whilst working for them.
If you don't fancy doing a hotel and catering course at your local college the best thing to do in the hotel industry is to get your foot in the door so to speak and work your way up. As you've already got waitressing experience, you could easily get a job waitressing at a hotel, get to know the various heads of department and then ask if it's possible to get a bit of experience in the departments that you like. Once they know how keen you are and see that you are capable of doing the different jobs you will be the first person that springs to their minds when new openings come up in their departments. Good Luck.
