I was going to have a go at making assorted sushi for my tea tonight but as I'm going late night shopping, may get home too late to start faffing around for one.

I know that the fish has to be absolutely fresh when making sushi, but is it still ok to use from frozen, which I already have in the freezer, or can i leave fresh bought fish in the fridge for a day or two before using it?

If I were you, I'd only use really fresh fish bought the same day as it was fished or no later than the next. Eating uncooked food means you're eating the bacteria on top too so the less the better.

As you said yourself , the fresh should be as fresh as possible, so it would be best to use it on the day you've bought it. Personally, I wouldnt use fish for sushi if I've frozen it or had it in the fridge over night.
I think I heard somewhere that the term'Sushi' doesn't, neccessarily, involve fish.
sushi is the rice that's used
