By far the simplest way is to just get a jar of Patak's Tandori Paste and follow the recipe on the back label. Normally, I wouldn't recommend using pre-made products, but Patak's is particularly good. I can't remember what the recipe says, but it's basically the paste plus yoghurt, lime and coriander..i think.

Thanks for your reply and i don't want to seem ungrateful but i really want to have a go from scratch. I would like to make it without the sugar and preservatives that usually go into sauces etc. But should i not get a recipe i will be sure to try it, or if i botch it up.

Cheers anyhow.

i make tandoori chicken with natural yoghurt, turmeric, garam masala, garlic, tomato puree, salt, and lemon juice.

mix all the ingredients together, slash the chicken, marinate over night

and cook in the oven

http://www.curryfrenzy.com/curry/recipes/Tandoori-Chicken.html has a good simple one. There will always be variations in the mix of spices and you could try one or two variations til you get the result you prefer. If you don't have a tandoor in the house - cook in the oven then brown on a grill or bbq for the crispy finish.

As above - marinade is the key.

Excellent ideas people, many thanks. I shall get my spices out and have a go at the weekend.

hi there,

What about the Great British Menu, Atol ( can't remember surname) cooked a really scrummy looking one with fresh herbs and spices - I'd eat it any day. It's on the bbc website/food.

Good luck

Here's an authentic recipe, I don't know the quantity you want to make, but change it accordingly.

10 chicken legs

Mariande:
2 cups yougurt
1 tblspn white vinegar
1 tblspn yogurt
1 tspn ground corriander
1/2 tspn ground cumin
1 tspm whole cumin seeds
1 tblspn olive oil
1 tspn chilli poweder
1 tspn paprika
1/2 tsp ground garlic powder
1/2 tsp ground ginger powder
1/2 chopped onion
salt to taste

Mix all the ingredients, and marinade overnight in fridge. Cook covered at gas mark 6 for 1 hour - or until cooked though.
