Does anyone have any ideas for using a quantity of cucumbers in my garden?

2 or 3 medium size cucumbers peeled and sliced (we also scoop out the seeds, but that's optional)
1 medium sized onion
1 cup water
1 cup apple cider vinegar
Salt to taste
Just slice onion, seperate the 'rings' and place that and the cucumbers in a coverable bowl with the water and vinegar. Store in the fridge, covered and serve in place of salad. You can replenish the cucumber/onions as needed...

Peel, de-seed, slice - add to stir fries
De-seed, cut lengthways, stuff with seasoned & browned mince. Tie with string to make a 'parcel' and poach.
Add to pickles as above
Peel, de-seed, halve and slice. Heat for 30 secs in melted butter. Seasona and serve with poached fish dishes.
Peel, de-seed and slice very thinly - use as dressing in sushi dishes.
Shred and use with crispy duck (or crispy chicken) dishes
Make your own tzadzki
Lovely fresh salsa - slice to 'tissue thin' some tomato, white and re donion and cucumber. Dress with olive oil, red chili 'rings' and mint. Serve as a side with bbq lamb......a few black oilves makes this look really posh too...
Make a 'no cook' soup with them.
Chop and add to salmon fish cakes mix.
And if you want to freeze them, the only way this is succesful is in brine - don't try it just by leaving in the freezer....
