Our Son is 15 weeks and our instincts are telling us that he is ready for solids.
He is interested in our food, we can't seem to fill him and where he used to sleep through, he now needs a feed.
We have baby cereal ready to go but the only thing is that whatever we read, it tells us that the absolute earliest is 17 weeks.
He was 2 weeks overdue, what do you think?

If you do decide to start weaning then perhaps just try 1 small amount of a baby rice or a baby porridge before his teatime bottle.
I was in exact same boat as you 2 years ago and i started my son at 15 weeks with porridge as he was very similar. Again he was 2 weeks overdue although im not sure they take that into consideration. One HV told me to wait and the other said to give him lots of carbs so in the end i waited as long as i could and followed my own instinct.

My daughter is 11 weeks old and she has been on a cereal based formula since she was 9 weeks old. The formula already has the cereal in it and we give her about 6 ounces every 2 hours or so and she sleeps through the night.
Every child is different, I think you should go by your own instincts. Doctors never want you to start too early with feeding the baby food, however, you live with your child and you know how hungry your child is and if the formula isn't enough, then it's time for food (cereal or baby food). However, you must be careful for food allergies and digestive issues - so not too much at one time.

No! 6 months is the earliest you should be thinking of soilds. At 16 weeks they do have a growth spurt, it's normal, but they just need to feed more, not solids. It's a strain on their kidneys and digestive system. Increases the risk of allergies and much more. Don't risk their health in an attempt to make them sleep through. It's not fair on the baby.
A baby is ready for solids when they can sit unaided and feed themselves. It's known as baby led weaning. No need for purees or cereals, they are pretty empty nutrition wise.

If you wait until they are ready they can just eat what you do from the beginning (aslong as it's unprocessed). My youngest son's first food was a nice roast parsnip he munched on.
