does anyone know of a site that can tell me how many people in the UK are employed in different fields? e.g. how many teachers, doctors, etc there are in the country?

I doubt if there is one.......The Government hasn't even got a clue how many illegals are in the Country. If there is one, I doubt whether you could rely on its accuracy!
