I have been asked how I think I could morph into the 'Best boyfriend in the world' by a rather scary Irish lass, that I am rather keen on, does anybody have a clue as after paying for dinner I am all out of ideas!

Show willing, to do literally anything - as long as you actually want to do it! Be willing to take her out, willing to listen, willing to do stuff that she wants. Be great in bed, tell her about your plans for the future - that include her (as long as they do) and buy her stuff - surprises, flowers, somthing little that she mentioned in passing that you remembered. Aaahhhh my boyfriend really is the best :))

Tell her that the notion of the best boyfriend is a myth...and its best to accept that no one is perfect and anyway why should the best boyfriend in the world be with her if she is not the best girlfriend in the world. she will see reason. be yourself, warts and all and they have to like it or lump it.
