Keeping Christmas Cake

I have an unopened iced xmas cake from Tesco which I haven't cut and would like to store until next xmas, how can I do it, freeze it or put in an airproof tin. It's only cos I can't get them here and it was quite expensive that I'm bothering. Thank you,

For more on marking an answer as the "Best Answer", please visit our FAQ.Put it in an airproof tin in a cool dry place and it should keep. If its in plastic now i would take that off and wrap it in silver foil.
It is possible that that tesco made it months before christmas so it may not last, maybe if you eat half now and save half then at least you wouldn't have wasted the whole cake.

I have kept fruit cakes for up to two years in the freezer, tightly wrapped in alumium foil and they've been fine but they haven't been iced, although one was covered in marzipan. You may find that the icing will become brittle after freezing and crumble but the substance of the cake should be OK. An airproof tin in a warm room is not a good idea because the cake could easily go mouldy.

If you take it off the board and turn it upside down you can stick a skewer in it and pour a spirit in e.g. whisky, or, more usual is Brandy - this will ensure your cake will keep.....IT IS ok to freeze icing and marzipan of that type too. I make and decorate wedding/christening cakes etc. so i am quite familiar with advice on this.
