Had one recently just cut in half and raosted with onions peppers tomatoes etc in.

1 small butternut squash
300g (2� cups) plain white flour
2 tsp baking powder
1 tsp mixed dried herbs
2 tbsp olive oil
1 tsp salt
� finely chopped fresh chilli (optional)
Preheat oven to 200 deg C, Gas Mark 6.
Wash the whole squash and place it directly onto the oven shelves but with a baking tray placed on the shelf below to catch any spillages, then bake it for 45 minutes and then allow to cool for 30 minutes.
Remove the skin and seeds, place the flesh in a bowl and mash it up, then add the flour, herbs, salt, baking powder and fresh chilli. Stir in the oil and knead everything together. Add either a little water or more flour (it depends on how much liquid was retained in the squash) to achieve a soft spongy dough.
Form the dough into a round about 6� (150 cm) in diameter and place on an oiled baking tray. Cut a cross in the top and bake for 30-35 minutes. Tap the underside of the loaf and if it sounds hollow, then it�s cooked. If not, bake for a further 5 minutes.

are you veggie, if not make up some meditteranean style mince and stuff it.

If you cut the squash in half first brush it with oil, and some brown sugar, then stick it in at gas mark 4/5 for about 50 mins, the flesh will be nice and soft. scoop out the flesh, bin the seeds, then mix in some cheese, nuts, mushrooms,shallots thyme and garlic, into the flesh, give it a good mash. Bung all that in the hole, stick some cheese on top and cook until that is all heated through.
Or alternatively,
If you cut the squash in half first brush it with oil, and some brown sugar, then stick it in at gas mark 4/5 for about 50 mins, the flesh will be nice and soft. scoop out the flesh, bin the seeds, then mix in some cheese, nuts, mushrooms,shallots thyme and garlic, into the flesh, give it a good mash. Bung all that in the hole, stick some cheese on top and cook until that is all heated through.
