For more on marking an answer as the "Best Answer", please visit our FAQ.Gently fry sliced cabanos in the oil, add paprika to colour, sweat garlic a little then add onion, chopped green peppers, celery & finely chopped red peppers. Cook over medium heat until moisture is driven off & vegetables are beginning to colour. Add 1" chicken pieces, prawns,bay leaves, thyme & oregano & cook over medium heat for about 5 mins. Add rice & stir for 2 mins (sounds a bit like doing a risotto or paella) pour in stock, salt & bring to boil, then simmer v. gently for about 15 mins or until liquid absorbed by rice. Stir in chopped spring onions & chilli powder if you like things hot. I must try this one myself, my mouth`s watering whilst typing this!
