Hi , how long do i cook a piece of pork 1.640 kg in the oven ? i always cook a mean roast dina but i just cant seem to get the pork right !!! i want it nice and tender not chewy and tough ??? My crackling always turns out yummy !!!
I'm the other way - I can cook the pork but the crackling turns out soggy! I'm sorry, I'm not metric, but I just roast it until it looks right and the juices run clear. Lots of luck!
Pork (& veal) take 30 mins per lb + 30 mins, ie longer than other roast meats @ 20 -25 mins + 25. I use 180 deg (gas mark 4) for the whole time, although some recommend 200 deg (g/m 6) for the 1st 10 mins to seal the meat & get the crackling off to a good start. The joint should be removed from the oven & allowed to "relax" for 15 mins before carving.
