Just bought a hand of pork from the butchers - does anyone have any suggestions for an imaginative way to cook it for Sunday lunch please? Or should I just roast it?

Make deep incisions in the pork and stuff with dried apricots then roast in the usual way.

I slow cooked it in cider vinegar with pepper corns and juniper berries. It was delicious - just fell apart.
