This is a 'how long is a piece of string' question. Depends on the variety of olive, how ripe it is, what sort of pressing is done, whether second pressings are included.

 

Carol Drinkwater in her book 'The Olive Farm' reckoned 12.5 kilos of olives gave 3 litres of oil, but a neighbouring press would need 6 kilos to make 1 litre of cold-pressed extra virgin oil from the same olives
