To BDon O.B.MUFFINS RECIPE
RECIPE FOR O.B.Ms, Baps, Loaves, this is a bomb proof and very easy method.
ingredients
300 grams strong white bread flour
100 grams self raising flour
1/2 tsp salt
1 tsp sugar
1 tbsp olive oil
2 fluid ozs milk
8 fluid ozs warm water
1 sachet instant yeast

method
in a Kenwood type mixer
place all dry ingredients into the bowl
blend with a balloon whisk, add the oil
using the dough hook, start mixer on min speed
add the liquid slowly
allow it to pick up all the dry mix
increase to speed 1, and knead for 5 mins
remove hook and remove dough from it
mould into a round in the bowl
cover with cling film, and leave in a warm place for 1 hour
place bowl on mixer, and on speed 1, knock back for 1 min
using hand and spatula turn out of bowl onto floured surface
roll out into a stick shape about 2" x 12" and divide into 8 equal size pieces
between your hands, roll each into a ball, and on floured surface, press out with fist, turning and flouring 3 / 4 times into 4" rounds
place on greased foil on a baking tray, and allow to prove for 30 mins
heat oven to 210 C, then after proving, place tray in oven for 11 mins, cool on wire rack when removed from the oven

this provides BAPS (soft rolls), for oven bottom, omit the oil,
make hole with finger proir to baking, and turn half way through the bake time, bake in oven bottom
for a loaf, as for baps, but bake for 30 mins
