My boyfriend is comin back after a 2 week break from home and i would like to cook him a romantic dinner for 2, i wanted it to be special, can anyone help me with recipes for a salad and main course that is simple to prepare as im not a brilliant cook.

Still in Tesco buy a joint of smoked or unsmoked gammon for about �4. Boil this in water for twice the time recommended. Cut and serve with potatoes. This will feed two people for 2 days so another wee tip. Don't throw out the water the gammon was cooked in, simply add carrot, turnip, lentils or barley and two quartered potatoes and in three hours you will have a lovely pot of soup which can be put in the fridge and that's the following days dinner also sorted, soup followed by the cold gammon.
Chop lettuce, tomato, cucumber and spring onion.
Put two large baking potatoes in a hot oven for an hour and a half.
Buy two salmon fillets, add small knob of butter, squeeze of lemon juice and black pepper, wrap in tin foil and place in oven for 20 mins.
Voila! A nutritious, delicious and easy to prepare meal.
no offence boboliver... but im not sure a bit of salad and twice boiled pig with potatoes is the most romantic meal...
If your not a good cook then it pays to make yourself look like you've gone to a massive effort...im also assuming that after two weeks away..there is the chance of some relations between the two of you post dinner...therefore i wouldnt do anything to heavy....why dont you buy some baxters canned french onion soup
put the grill on and warm the soup on the hob, two cans is plenty... you need big bowls....bigger and deeper than cereal bowls...so be prepared...pour the soup in the bowls and put layers of sliced french bread on top...cover with loads of grated strong cheese black pepper and salt and put under the grill...take it out when the cheese is melted and bubbling...really really nice...and you can claim you made the soup :)
2nd course...crush, anchovies...fresh red chilli...garlic...loads of lemon juice and capers in a pestle and morter ...add a can of chopped tomatoes and stir....cook some spaghetti in very salty water ...when its just cooked drain and stir through the paste you have made...keep warm o the hob and add some chopped black olives and some pine kernals...top with rip up basil and serve with a cold glass of pinot grigio and a salad tosssed in olive oil and white wine vinegar...eat get drunken....get jiggy!!!!

Put a little oil in a frying pan add minced beef, a tin of toms, a little tom puree, oregano, crushed garlic, chopped onions, mushrooms and a splash (or more!) of red wine. Heat through until reduced. Add spaghetti to boiling water. Pout meat and sauce over pasta.
Buy a cristy loaf/ french stick and slice. Get a small bowl and mix up some butter with some garlic granules and spread onto the bread. Place under grill.
Enjoy!

Toss a load of different salad leaves, cucumber, spring onions, cherry toms, grated carrot, sweetcorn, anything you like and leave in a big bowl in the middle of the table.

Steak and Caesar salad are a great combo and easy to prepare...
For the salad, combine Romaine lettuce with Caesar dressing, Worcestershire sauce and a touch of anchovy paste. Toss until the lettuce is thoroughly coated, then sprinkle Parmesan cheese on top. (You can also add croutons if you like.)
Get a couple of nice sirloins or rib eyes and gently season with a touch of Worcestershire sauce, black pepper and garlic powder, then grill or broil to taste (I like my steak rare, so when broiling I cook it for 10 minutes on one side, then turn it and cook another three minutes. Using my George Foreman-type grill, I cook it for about 10 minutes total.) Pierce a couple of baking potatoes with a fork, then place them in the microwave for about six minutes. Turn them, then zap them for five more minutes. When they're done, split them and add butter and sour cream. Champagne and candles complete the picture - enjoy!
