Why doesnt't the cake on an arctic roll freeze?

Good question, but does any sponge cake?

I think it's cause sponge cakes have a large amount of air in them and so they only freeze to a certain extent.  they are not dense enough to freeze solid, as the ice cream does.

I'd imagine it does freeze eventually, but not at the conventional temperature of a household freezer.
