Buy your lamb, I buy a lot because I like meat on my plate.
Wash lamb and in the final wash use 1 lime cut in half over the meat and rinse.
Season meat with
Curry powder -
sliced onions
spring onion/escallion 5 springs
Scotch bonnet pepper, I use 3
4 cloves garlic
A big bunch of thyme
A teaspoon of turmeric.
Rub all this into the meat making sure all meat is coated.
Leave, longer the better.
Heat pan, when hot add oil, and when oil hot, add about 1 tablespoon of curry powder cook for 2 mins.
Add meat and about half pint of water, as lamb makes juice. Add a chopped diced irish potato stir around and leave to cook until lamb is tender. which should be about 2 hours.
Taste half way through, this is not an indian curry and the juice/gravy will be runny.
Cook basmati rice and serve with the curry mutton on top the rice. I also do homemade coleslaw to cool the mouth down or a green salad.
