But you're talking about your own omnivorous diet.
For a veggie to cut back on carbs and eat vast amounts of one food type (in this case Soy) would be potentially damaging, and not just from a nutritional viewpoint. Soy has side effects if eaten in large quantities - upset stomach/bloating/wind etc.
The best way to lose weight on a veggie diet is to eat sensible portions of carbs like brown rice, brown bread, wholemeal pasta, and potatoes with skins on, alongside an assortment of animal proteins, e.g. eggs, milk, yogurt and cheese, and a good mix of non-animal proteins, e.g. soya, pulses, nuts. And fill up on green leafy veg if you are still peckish. Snack on fruit rather than chocolates or sweets and you will be fine.
