Why do i always get it wrong??

Whenever i cook rice i always seem to Cook too much! How do you know how much to put in the saucepan without weighing it??

When cooking basmati rice I measure mine in a measuring jug, just like Delia. Only I use 3oz of rice per person. Then double the amount of water, add a little salt, stick a lid on the pan and bring to the boil. When it has boiled turn down to simmer, keeping the lid on (though I usually give a quick stir when it's just boiled), and wait about 12 minutes, or until the rice has absorbed all the water.
When cooking long grain rice I use about a coffee cup of rice per two people, stick in a large pan of boiling, salted water. When rice is cooked drain into a colander and pour a kettle full of boiling water over it.
When making risotto again I use a coffee cup of rice per person.

I usually go on about 3/4 coffee mug full of dried rice is plenty for two very generous portions (to cook this in a saucepan you need about 1.5 mugs of water). The coffee mug I am talking about is not one of those silly espresso coffee cups but a normal mug like what you can buy in the supermarket !
I got around this problem by buying a rice cooker in The Range (sorry to advertise but at �5 for perfect rice, it's worth its weight in gold lol)... you put dried rice in the lower half of the cooker up to a marked level, pour enough water over to just cover the rice, cover with the lid and place in the ping machine for an exact given time => perfectly cooked rice, just the right amount for two portions !

My leaflet says they are manufactured by MicroWise Cookware but I can't find a pretty picture of the rice steamer for you ! I have a riceboy - it allows you to cook rice in the microwave and it comes with a mini jug that you measure the rice and water out with it - whack it in the microwave and it comes out perfect every time. It was my mam's and I took it with me when I left home - it must be about 10 year old but it's the best kitchen utensil I have!!
