I hope someone out there makes these regularly and can give me a tried and tested recipe that they use! many thanks

Warm 8oz dates gently with juice of 1 lemon until squishy, leave to cool
Cream 4oz butter with 4oz sugar
add an egg
sieve in 4oz flour, 4oz cornflour & 1tsp bak powder
Knead & divide into 2 balls, chill. Chill greased tray
Line tray with half dough (roll out or press in with floured knuckles. (just do it quickly, dough will be soft)
Spread on date mixture, keep away from edges
Roll out top dough (easier in 2 pieces). Lay on top & press edges together with end of a fork. Prick top all over
Bake 180* 25 mins Sprinkle with castor sugar & cut into squares
