We have several geese and a few ducks here on the ranch in the western U.S. (Geese are better at alerting about intruders than even our dogs). On occasion we have a goose egg, usually fried like chicken eggs. Even more occasionally we have a duck egg. The yolks are a deeper yellow, much like brown chicken eggs, but I think that's more from their diet, since they eat a lot of cracked corn. The eggs are very much like chicken eggs as to taste... maybe slightly stronger, but not unpleasant.... We also have turkeys and utilize their eggs as well... about the same report for them...
