Recipe from an old book so I haven't translated oz into grams
6 oz sr flour
4 oz marg
7 oz sugar (caster is best)
pinch salt
good pinch cinnamon
2 eggs (separated)
3 oz plain choc
8 tbspns milk
Cream sugar/marg till fluffy
melt choc and blend with egg yolks
mix spice, salt, and flour and stir in alternately with milk
beat egg whites till stiff and fold into mixture
Bake 45 mins at 350/gas 4 - use tin 8-9 ins.
Cool and ice
For the icing they're is really simple technic I use of mixing exact amounts of dairy milk melted chocolate with double cream, then whisk.
My family go mad for it!
