I recently started making Spaghetti Bolognese for the family. I've made it about 4 times now and each time I have suffered with terrible stomach ache the next day. I make it with pork mince and a tomato sauce that I make myself from tinned tomatoes. I'm wondering if I'm tomato intolerant as this is the only time I eat tomotoes. I don't eat tomatoes in any other form at all. Is there such thing as a tomato allergy? or should this be on the health section?
A number of people in my family have problems with tomatoes. My daughter and I can't eat fresh tomatoes but are OK with cooked ones although in limited quantities. If you search Google you will see a lot of people have problems. Some relate it to the fact they are part of the nightshade family and contain various chemicals and enzymes.
I love spaghetti bolognese, and always add ground cinnamon and cloves, even in the knowledge that I will get bad dreams, and intestinal gyp the next day.
Interesting, using pork mince, it's usually lean steak mince.
Delia smith's recipe said to use pork although i believe i did use beef once. I only add salt and pepper and a bit of basil. I think I'll just stop making it. The guts ache has put me right off.
In Bologna,(home of this dish) they ONLY use Beef ,they would be horrified by anyone using Pork!
Of course if the Pork mince is undercooked in the dish you might get an upset tummy,which you wouldn't with the Beef mince.

If you think it is the TINNED toms that are causing it,try using Passata (bottled sieved toms) which have a lower acid content,and (as a side issue) make a much better sauce than tinned tomatoes as they are not so watery.
How could the pork mince be undercooked,as compared to the beef??? A good bolognese sauce should be cooked for several hours...and very slowly. Use beef anyway......that is traditional.
As for a possible tomato allergy...have some-cooked on their own....and see if you get a reaction.
