I'm doing roast pork tomorrow & I want to do some fennel. I've never cooked with it before, can anyone give me some ideas please

I love cooking with Fennel.
I just boil it in salted water if I'm serving cod with butter beans and aioli. (Rick Stein)

PORK, FENNEL AND GOOSEBERRY STROGONOFF
Ingredients
750grams pork fillet (cubed)
1 large onion diced
3 sticks celery chopped
450 grams fennel sliced
225 grams gooseberries
oil
butter
2 tablespoons plain flour
chopped coriander
2 cloves garlic, crushed
4 teaspoons brown sugar
dry white wine
carton soured cream
Heat oil and butter and cook onion, celery and garlic until soft
Stir in meat and cook until meat colours
Stir in fennel, coriander and flour
Add wine gooseberries and sugar
Simmer on a low light for 1 hour
Add sour cream and serve with feathery tops from fennel
This is also good with apples instead of gooseberries and apple juice instead of wine
