Firstly as andy hughes says - try and fish (hah - couldn't resist the pun!) to find out what he likes/dislikes. Secondly - keep it simple and within your limits - there's nothing worse than spending hours over a hot stove for the food to be mediocre. I have done this myself before now, and I can cook. Thirdly, doing something in advance is always great - tastes better and saves you flapping around all day - curry and the chilli con carne are good examples of this.
Finally, have a bluddy good night and make sure there's LOTS of wine!!

pasta and sauce is pretty easy, quick to do so doesn't take up your whole evening. buy some fresh tortellini from a supermarket, get a tin of tomatoes, a courgette, some mushrooms, some peppers, some chicken... throw it all in.
it's ideal if you don't know what he likes, as you can cook it with him there & so if he doesn't like mushrooms you can leave them out etc etc. just make sure you have lots of options!
besides, he'll be there for the company rather than the food so it doesn't matter that much! have fun on your date
Fajitas are really easy, tasty and don't require much work to cook, and what's more the toppings make it look impressive!.
Cut a couple of chicken breast fillets (or some rump steak) into strips. Mix up a marinade made with 1/2 to 1 teaspoon chilli powder, 1/4 teaspoon cumin, 2 cloves of garlic (crushed), 1/2 teaspoon dried oregano, 2 tablespoons olive oil and 4 tablespoons lime juice or lemon juice. Pour this over the meat in a non metallic dish, cover with clingfilm and put in the fridge for at least 2 hours.
From any decent supermarket, buy some sour cream, some salsa and some guacamole for the toppings, and some flatbread tortillas - the large ones are best as you can fit more in them!
About an hour before he gets there, slice one onion and a red and green pepper and mix these in with the marinated meat.
Prepare some grated cheese, shredded lettuce, and chopped tomatoes with a little salt - these are your additional toppings.
When he gets there and he's had a couple of drinks, both of you go into the kitchen and you can stirfry the marinated meat/veg for about 5-6 minutes until the meat is cooked.
Dump some meat/veg on a tortilla, and top with some of the toppings then roll it up and eat with your fingers!
