I do all fish in the microwave. I know there are recipes for wrapping fish in foil, baking with parsley and lemon, grilling, frying, but I just put the fish on a plate, cover with another plate, and microwave for about 2 minutes, then leave to stand. Perfect every time in my view.
I've posted on here before to state that I'm of the opinion that microwaving is absolutely the best way to cook firm-textured fish such as salmon (delicious) and trout (even better!).
When cooking a whole trout (or a small salmon), slash through the skin in several places before cooking, but things like salmon steaks can be cooked just as they are. The important thing is not to overcook them. Whiffey's suggestion of about 2 minutes sounds about right to me.
NoK- I can't stand up or walk cos of arthritis so I have to, at the moment, cook using the microwave so I don't have to stand up. It's not ideal, but I wanted to eat healthily.
Microwaving fish is an excellent way of cooking them. One way is to put some butter, herbs and a slice of lemon in the cavity, wrap the fish in silicone paper and microwave for about two minutes for an average size fish. Obviously a small portion of fish will take less time so it is trial and error. You need to practise! Finishing off under the grill or in the oven is an option but take no notice of NoK - presumably those letters mean No Knowledge. I've cooked fish this way many times and had no complaints.
I didnt know that fish could be cooked in just 2 mins in the mnicrowave! I always put it in the oven and it takes about 15 mins to cook salmon in there.
If it a whole (lrge) salmon that you want to cook easily and keep presentable . wrap it in a good well sealed coati of tin foil (after adding any herbs /lemons you would normally add) and put it in tne DISHWASHER (no detergents or tablets added) 'Wash' on a medium timed program but HOT wash 55plus .. Fish cooked perfectly, no soapy scent and still in whole and not bent as usual to fit most ovens etc..
I've tried it and no one knew - they thought it was something the top chefs dropped off for me. Please experiment with time/ size before inviting royalty. Also big plus no smelly kitchen!!
