all a bit silly really. anyway.
the podium champagne tradition was apparently started by dan gurney after the 1967 24 hours of le mans race. drivers will generally refrain from spraying champagne if a fatality or major accident occurs during the event. sometimes, depending on the country (e.g. middle east countries), drivers have been requested to use orange juice instead of champagne.
generally after this, the (empty) bottles are signed by the driver and auctioned off to charity. sometimes though, the bottle is not opened and the driver gives it to his team. often though they are overwhelmed and cannot resist.
