I'm just after some inspiration really for things I can prepare for lunch. There's not a massive criterior, I am watching what I eat so I'm limiting the carbs as much as possible so I'm trying to steer clear of pasta as much as possible.
As much as I love toasted pitta and homous, even I'm starting to get a little bored of it. Any suggestions?
olives,feta cheese,cherry tomatoes,boneless chicken breast,prawns,rocket,spinach leaves,boiled eggs,ham,felafel,pulses like chick peas,cannelini beans or butter beans............any combintion of the above.
Or..make a potato tortilla......have with a salad-even better cold.
I used to do crab stick salad. get plastic box, put mixed salad in bottom, chop up cucumber then chop up 4 crabsticks shake box then add cheese coleslaw. Mmmmm
