what to serve with chicken breast

in red thai curry sauce?
My OH usually cooks but he's working late this week and I have a week off so it's my job, and I'm very out of practice!
I've taken out of the freezer two chicken breast in red thai curry sauce, and I'm looking for suggestions as to what to serve with it, other than just rice on it';s own?

i've have some steamed or stir fired veg - baby corn, pak choi, mange tout, beansprouts, that kind of thing
