how do they give a teston a motor bike? they hardly sit behind you screaming directions and filling in their little forms at the same time

You drive a pre-determined route, and an examiner watches you to see that you indicate, steer, position, and corner correctly. The emergency stop is done by an examiner stepping out in front of you.
In the UK you do a 'Pursuit Test' the examiner follows you on another bike with a radio intercom.

I think it is different in varous test centres. I did the set route and standing beside the road thing, but that was in the 1960s. I've seen the local test people here in Newcastle use the follow on bike style tests, but nearby Durham seems to still use the old method.

I did mine in Bristol about 10 years ago and it was a pursuit style one.  The examiner followed me in a car and gave me instructions via an intercom.

I didn't know that some places still use the old watch-from-the-pavement method...
