Does anyone have an uber recipe for me for a nice moist yummy cake or brownies?

I am a little fussy, I don't like nuts generally. I do like toffee, vanilla, chocolate, coconut, marzipan. I usually always make a Victoria sponge, which I am bored of.

I have a new oven, which is pretty damn good - so I want to test it out. Unfortunately I do not own a blender type thing, so its hand whisking all the way for me.

remember you don't HAVE to add the walnuts!! whenever i make these, they always disappear very quickly. Sometimes i add coconut in place of the walnuts, or some chopped fudge - Good luck with your new oven!

Turn a victoria sandwich into a lemon drizzle cake by adding 2Tabls lemon juice and the grated zest of an unwaxed lemon (At the supermarket) then when cold, pierce cake all over and drizzle 2 more tabls lemon juice mixed with 2 heaped tabls icing sugar and drizzle over

Greedyfly, if you could afford invest in one of these. This is a big help when mixing batters for cakes, pudding, whipped cream etc. On the list there's a very cheap one and it got good reviews. http://tinyurl.com/26sbxlk
I've always mixed my cakes by hand-with a wooden spoon. They are lovely and moist.
I use orange instead of lemon for a variation on drizzle cake.
well the best cake i´ve baked in a long time, has to be the fresh beetroot and choc cake. if you´re interested let me know.

Because I am currently housebound JJ and bored stiff!
i fidn that when maiking cakes (you probably should do the same with brownies), the more you crfeam the butter sugar at the start, the softer, lighter and fresher they taste when you eat them.
Creamy Chocolate Cake for your loved one.

Ingredients

2 cup flour

2 cup sugar

1 cup water

1 stick of butter

1/2 cup oil

3 Tbsp. Cocoa

2 eggs

1 teas. baking soda

1 cup buttermilk

1 tsp. vanilla

For Frosting:

1 stick butter

6 Tsp. canned milk

1 Tsp. Cocoa

1 pound powdered sugar

Method

1.Mix flour and sugar in large mixing bowl. In small saucepan stir together water, butter, oil and cocoa. Bring to boil.
2.Add to flour mixture and beat with mixer until well blended.
3.Dissolve soda in buttermilk and add, beating well.
4.Add eggs one at a time and mix in well. Add vanilla.
5.Pour in 13 x 9 pan prepared with Pam and bake in 350 degree oven for 25 - 30 minutes or until pick inserted is clean.

For Frosting :

1. In small saucepan melt together butter, milk and cocoa.
2.Heat through and add to sugar, mixing well to form smooth consistency.
3.Pour over warm cake.
Ingredients

1 cup white sugar
1/2 cup butter
2 egg whites
1 whole egg
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
Preheat oven to 350 degrees F.
Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Stir in vanilla. Beat in the eggs, one at a time - alternating with the flour/baking powder mixture.
Stir in the milk slowly, constantly mixing, until batter is smooth.
Bake for 30 to 40 minutes, or until golden brown and toothpick comes out clean.
