Cooking for one (or two)

Whenever I cook just for myself, or for only two people, I find I have ingredients left over that I have to then find another suitable recipe for.

At the moment, I have 100g (about 2 tablespoons) of natural yoghurt to use. I would usually add it to a curry, but what else could I do with it? Any smoothie recipes? Other suggestions?

Add some mint sauce & salt to taste & you have a rather tasty dip..Mmm enjoy..!!
blitz it with cucumber and use it for a cooling face mask
Add it to the jar of mayonnaise you probably have in the fridge.

top dry breakfast cereal flakes (e.g. bran flakes or special K) with the yogurt and some sliced fresh fruit - pear, nectarine, strawberries, or drained tinned prunes.

Just stir it all together and eat with a spoon! No need for milk.

Just eat it - I love natural yoghurt.

Use it in a marinade, for example:

  • Mix 100g yoghurt and a spoonful of Patak's lime pickle (teaspoon or tablespoon depending on how brave you are feeling).
    Cut chicken or turkey breast meat into şiş-kebab-sized cubes. Leave overnight or longer in a freezer bag. Grill.
  • Mix 100g yoghurt, juice of 1/2 a lemon, olive oil, garlic, fresh herbs such as rosemary, thyme, sage etc., black pepper, freshly ground fenchel seeds and a pinch of chilli. Mix in blender.
    (Add salt after the meat is cooked.)
    I marinated a pork fillet in this mixture at the weekend and took to a barbeque, grilled it whole then carved it into thin slices. It went down very well indeed.
    Works well for poultry, too.

blueberry and orange smoothie.. but in sure you could use some other fruit.

125g blueberries

125g natural yogurt

freshly squeezed orange juice.

wizz everything in blender , if you want no bits you can sieve the mixure....... yummy

Thanks for all the responses. I did indeed make a smoothie with it. Mango and banana. I only wish I could get smoothies to keep longer, so I've started another thread about that.
