My curry includes the basics of
Some kind of meat, prawns or vegetables....but usually chicken
A jar of Pataks paste....there's lots to choose from
Big tub of Greek yoghurt
Ginger
garlic
Chillis (according to taste)
marinade chicken in a generous amount of the paste, ginger, garlic and chilli
Stirfry the chicken/paste until browned (the smell is devine by now !!!)
Add yoghurt
Simmer until chicken is tender and cooked but not over cooked.
Add a pinch or two of sugar or drizzle of honey to sweeten a bit if needed
Add a sachet of cream coconut if you want
Right at the end, add a big handful of chopped, fresh corriander.
Making curries is all about experimenting. Write it down and then change things a little. None of my curries are the same.....some are awesome, some not so good. You could replace the Yoghurt above with a tin of chopped tomatoes or for an authentic Tikka Massala, use a tin of Cream of tomato soup as the sauce and add some cream.
Don't forget that you can also add chunks of pineapple, sultanas, apple, onions, peppers, mushrooms or anything you want to the curry.
