Red snapper...

I've got some Red Snapper fillets for dinner but I can't think what would be best to serve them with. It's been ages since I've had them. I know I like them but I can't really remember what they taste like.

Any suggestions?

That would drown out the true flavour of the fish. You need something more mild or subtle ummmm.....

Coat the fillets with either sweet chilli sauce or pesto and grill until the surface is crispy.

Whoever....these fillets were double the thickness of a good steak.
