I took some cod fillets out the freezer yesterday which I normally just serve with spuds and veg. I've decided I want to do something less boring tonight - it can't be spicy though cos one of our number will not "do" spicy. Any suggestions, please?
Put the cod fillets on foil or baking paper with olive oil, herbs, black pepper and some vegetables - I use cherry tomatoes and mushrooms. Wrap them up in parcels and bake til cooked. I serve with cubed potatoes baked in oil, rosemary and garlic.
In the end I made a luxury fish pie (it was the only thing I could persuade the teenager to eat!). But I've still got some more in the freezer for another time!
