They are Cucumis anguria, native to the Caribbean, but known really as baby cucumbers. The Americans call them pickles, the French cornichons, the Italians cetriolino and the Spanish pepinillo. In New York, virtually every sandwich will contain a gherkin. The cucumbers are traditionally pickled in malt vinegar in this country so you taste the vegetable and also the acid.
