What will happen is that when the ipod is connected, the computer will treat it like a hard disk. If the ipod software is installed, then autosync will start and screw you over. Instead of uninstalling the ipod software, you could try ending the iPodService.exe program from the processes list on task manager. If it all goes wrong and autosync starts, this page can help you out.
Lastly, the music you want is in a hidden folder on your ipod. I can't remember the name of it, but it's really easy to find.
