Will this flower next year?

When all the flowers drop off my plant (not sure, is it an orchid?) should I cut off the dead light brown ends where the flowers were, or leave the ends as they are .. I want it to grow next year. At the bottom there is a new shoot growing out, sorry my photo's not too good. It was a lovely plant but the two shoots are, as you can see, now dying off.

Although two of the stalks are still in flower, they are on their way out, probably another month or so. However bottom left, there is a new stalk growing. It looks a bit merged in my photo. Should I cut the old ones off when they have finished flowering, and still water sparingly because of the new stalk ??
