would white wine be better to fry with instead of oil? I'm thinking that the alcohol is where the calories are and if you fry off the alcohol then you remove the calories? non?

That wouldn`t be frying though would it? You have to have oil to fry. It would evaporate and the food would dry out.
You can't fry without oil - you would be braising or poaching.
Boiling wine doesn't rid of the sugars in it, it is the sugars that makes wine high in calories.
