WHY DOES THE VOLTAGE ONLY SHOW UP WHEN THE EARTH LEAD IS CONECTED TO EARTH ? THANKS

You have to complete the circuit by going to earth otherwise the electricity has no way of travelling through the meter to be measured.
a bit scary, anyone trying to using a multimeter shouldnt be asking a question like this....
At college, years ago, I recall one of the class opting to measure how many amps were flowing beween 2 points by placing a probe on each. The meter cut out with a large bang.
Hence learning about what a 'shunt' is for.

If you don't even know what tool you are using then you certainly shouldn't be using it.

maybe a mulitmeter is different from from a multimeter - not that I know what either of them does.
