Does anyone have a tasty way of cooking red cabbage on a dinner menu?

medium to large head red cabbage, washed and shredded (coarsely)
1 large tart apple, peeled, cored, and sliced (we prefer Granny Smith here in the U.S.)
2 tablespoons butter
1 bay leaf
salt and pepper
1/4 cup dry white wine
2 tablespoons vinegar (apple cider vinegar is best)
1 teaspoon sugar (for a real treat try brown sugar)
Preparation:
In a Dutch oven or large deep, heavy skillet, melt butter; add cabbage and apple slices, mixing well. Add bay leaf and salt and pepper to taste. cover and cook over low heat for about 10 minutes. Add wine, vinegar and sugar; stir to mix well. Cover and cook for about 45 minutes to 1 hour. Taste and adjust seasonings.

Yes, perfect recipe from Ainsley Harriott's Meals in Minutes which accompanies the spiced duck breast. Cabbage, red onion, apple, wine etc stir-fried - takes about 20 minutes and can be reheated succesfully. I cooked it the day before we had friends round on Boxing Day and warmed it up again delicious! Never cook mine any other way.
