I have to make quite a lot of these for a buffet and could do with a really authentic tasting recipe, any help appreciated

vegetable samosas
serves 4
suitable for freezing

250g potatoes, peeled and diced into 1cm peices
200g carrots, diced the same
50g frozen peas
low fat cooking spray
1 tsp medium curry powder
1/2 tsp black mustard seeds
pinch hot chilli powder
2 tbsp chopped fresh coriander
four 25x50cm large sheets filo pastry
salt and pepper

heat oven to gas mark 5/190/ fan 170
cook diced potato and carrots in boiling salted water for 7-8 mins until tender and drain
tip frozen peas into a seive and run under the cld tap to defrost
spray a saucepan add spices and peas and fry for 1 minute
add potatoes and carrots and mix well, lightly crushing some of the veg
remove from heat, stir in coriander and plenty of seasoning, tip onto a plate to cool and divide into 8 portions
cut each sheet of filo in half width ways
stack filo together and keep covered with a damp towel while you work
take a peice of filo and spray
fold in half length ways to give a long narrow strip
place a spoon of spicy veg near top, bring one corner of the pastry down over the filling, then fold the pastry up in a series of triangle shapes
place the samosa on a baking tray with the end of the pastry tucked underneath
repeat with remaining filo and veg
spray the samosas then bake for 15 mins until golden, leave to cool slightly before serving

wow boob, that sounds delicious - i for one am going to do them for tea! I didn't realise you could bake them instead of frying, and there's very little fat in filo, isn't there?


sorry to pinch your thread, tobeloy, but what would you serve with them, boobesque?

you can serve them with raita, which is 100g of natural yoghurt, half a cucumber grated and a table spoon of fresh mint, just mix them all together, that is a dip for them,


i would serve them with curry, any kind of curry goes well with them
