How do I go through a long piece of text and change, say, a name from Smith to Jones, without having to do each one individually, please?

Go to Find/Replace (CTRL-F) will bring it up.
Enter SMITH in the Find box and Jones in the replace box and then select 'replace all'
Be aware that if your text contains words like blacksmith or Smithsonian then those will be changed as well.
