I'm going a bit outside of my comfort zone and am making marinated ribs, spicy potato wedges and jalapeno coleslaw this evening. No idea why as I'm not a huge ribs fan!
Tomorrow I'm planning butternut squash gnudi woth sage butter to start followed by roast chicken with pesto, steamed broccoli with toasted almonds and new potatoes and an apple tarte tatin to finish.
Gnudi are the filling of ravioli etc hence they are 'nude'. Like gnocchi but lighter.
Roast a squash, mash it up with ricotta, seasoning, 00 flour. Roll into sausages, cut into 1" pieces and drop into boiling water. When it rises to the surface it is cooked. Dress with a sage butter, pesto, grated parmesan & olive oil...whatever you fancy...
Ratty, your supper tonight is my favourite meal when I'm home alone. I love a plate of nibbly bits that I can tuck into through the course of the evening.
Sounds lovely, but for over 3months I went off food, am just taking tea and toast, don't know why, I am not slimming or trying to lose weight.

I am on my own this weekend as OH is off on a stag do. Had thought about treating myself to dinner at the pub opposite as the food is gorgeous but have decided to be good and cook up a load of bolognese so I can have some for lunch during the week and can freeze some too :-) aren't I a good girl!
You are more than welcome to join us Wiggal. It is so satisfying doing batch cooking, opening the freezer mid week and taking out a homemade ready meal, you can't beat it.
Friends for lunch today- had been planning a BBQ, but woke to drizzly murk instead of sun :+(
Rapid rewrite of menu - raided my freezer for some home-made chicken&leek soup, picked up some braising steak from the farm shop & turned it a quick bouef bourguignon, with pommes vapeur and fried spring greens - then had a Christmas pudding and some custard - comfort food for a dreary day.
Will be living on sausages/lamburgers/kebabs for a while now though ...
Just got home from my first day at work.(Really just a meet and greet and company policy day) More of the same tomorrow. Cooked a chorizo and scollop linguine for us and now doing homework for sundays' meetings. Tomorrows food will be anybodies guess!
